Dutch Pancakes with Bacon

- 200 g All-purpose flour 1 1/3 cups / 7.1 oz
- 200 g Whole wheat flour 1 cup / 7.1 oz
- 800 ml Milk 3 1/3 cups
- 2 Eggs
- 1/2 tsp Salt
- 1 tsp Sugar
- Several strips Bacon
Mix the flours, salt and sugar together.
Add the milk in a steady stream while whisking to remove all the lumps.
Lightly beat the eggs, then add them to the batter.
Heat 1 Tbsp of oil in a non-stick frying pan. Add 3 or 4 strips of bacon and let them cook slightly.
Pour the batter over the top until it covers the whole pan.
Wait until the pancake is cooked almost all the way through, then flip it using a thin spatula (or slide it onto a plate and use that to help you flip it over).
Cook on the second side until it is brown.
Eat immediately!
