Dutch Pancakes with Bacon

Ingredients

  • 200 g All-purpose flour 1 1/3 cups / 7.1 oz
  • 200 g Whole wheat flour 1 cup / 7.1 oz
  • 800 ml Milk 3 1/3 cups
  • 2 Eggs
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • Several strips Bacon

Instructions

  • Mix the flours, salt and sugar together.
  • Add the milk in a steady stream while whisking to remove all the lumps.
  • Lightly beat the eggs, then add them to the batter.
  • Heat 1 Tbsp of oil in a non-stick frying pan. Add 3 or 4 strips of bacon and let them cook slightly.
  • Pour the batter over the top until it covers the whole pan.
  • Wait until the pancake is cooked almost all the way through, then flip it using a thin spatula (or slide it onto a plate and use that to help you flip it over).
  • Cook on the second side until it is brown.
  • Eat immediately!
